Maize Starch — Sovereign Nutriment

Sovereign Maize Starch is an odourless white powder composed of the two glucose polymers amylose and amylopectin. On its own it is a workhorse — a diluent, a thickener, a gelling agent, a moulding medium and a dusting powder. Converted, it becomes the feedstock for liquid glucose, dextrose monohydrate, dextrose anhydrous, maltodextrin and sorbitol.

The two specification lines that matter most in practice are starch content on a dry basis, which tells you how much of the bag is actually doing work, and cold water solubility, which tells you whether the starch has been pre-gelatinised or damaged in processing.
